Dried pears on the road trip would be the best option.
Dried banana would contain some amines but regarding eating them… it all depends on your tolerance level. You might be fine to eat only a few daily, or the whole bag (although too much fruit can be problematic). But it depends on the individual and the only way to know is to test them ( ideally when you are not on holiday or about to go on holidays). Most of all… enjoy your road trip and don’t stress about food. Be mindful about what you eat, but never stressed.
