Amines in Meat

Can you slow or stop amines from developing in meat by freezing it?

Hi Anna, it's best to thaw meats in the refrigerator (if you have severe amine intolerance). But I often thaw meats on the bench top or on low heat in the oven, when I had amine intolerance. If I am freezing mince, I freeze it flattened, then I cook it frozen in the frying pan as it thaws quickly when frozen and cooked this way. See our Amine and meat podcast here for more information.
