Who knew cabbage could taste this good? When roasted, cabbage becomes a flavourful ‘steak’ that is both soft and crunchy.
Topped with caramelised leeks and our creamy White Bean Sauce, this makes a healthy and delicious breakfast, lunch or side dish with dinner.
Notes
We used beet cream for the photo, however beetroot is no longer part of the Eczema Diet or FID programs. You can use red cabbage instead of white to get a splash of low-sal colour.
You can switch the White Bean Sauce for the Sesame Free Hummus or another topping of your choice.
Topping it with shredded chicken would be a lovely alternative.
Serves: 5-6 steaks, combined
Preparation and cooking time: 45 minutes
Ingredients
1 small to medium whole white cabbage (or red cabbage)
2 teaspoons of rice bran oil, high oleic sunflower oil or safflower oil
1 teaspoon of garlic powder
½ serve of White Bean Sauce
½ serve of Caramelised Leek Sauce
A handful of green spring onions (shallots, scallions) or chives
Method
Preheat a fan-forced oven to 180°C (350°F) and line a baking tray with a silicon mat or baking (parchment) paper and set it aside.
Using a knife, remove the outer green layers of the cabbage and trim the stem/base so the cabbage can stand up flat on the bench. Cut the cabbage into 1.5cm (½ inch) thick slices so that you have about 5 or 6 ‘steaks’. Rinse them in water so they are damp.
Then using a pastry brush (or your fingers), brush the oil onto both sides of the steaks. Place the cabbage steaks onto the tray and sprinkle one side with the garlic powder.
Bake the cabbage in the oven for about 20 minutes, then carefully turn them over and bake them for another 20 minutes. Check them every 5 minutes to ensure they don’t burn.
Meanwhile, make up half a batch of White Bean Sauce. and Caramelised Leek Sauce.
The cabbage is ready when it is soft in the middle and easy to pierce with a knife.
Place the steaks onto plates and top them with the Caramelised Leek Sauce and spring onions or chives, then drizzle with the White Bean Sauce.
Store the leftovers in a sealed container in the refrigerator and reheat them when needed.
